Yes that is the joy of eating them..but as you chew the swet skin balances it out. Some are more sour than others. I asked a question a while ago about who liked kumquats because I love them. Someone sent me a recipe that boil them down into a syrupy mixture to top ice cream. If you want the recipe let me know I'll add it to my answer.
Are kumquats supposed to taste super sour?
Not terribly. At least, I've never found them that sour. It also probably depends how ripe they are.
